Ammonium glycyrrhizate is a commercial flavorant and emulsifer found in Glycyrrhiza. It inhibits 11β-HSD and is used to treat herpes virus infection. It inhibits viral entry to host cells, prevents glial inflammation and kaninic acid-induced neuronal death, and suppresses DMH-induced carcinogenesis.

Biological target:
Ammonium glycyrrhizinate (Monoammonium glycyrrhizinate) has various pharmacological actions such as anti-inflammatory, antiallergic, antigastriculcer, and antihepatitis activities.
In vitro activity:
According to apoptosis data, AG (ammonium glycyrrhizinate) was able to significantly (p < 0.01) reduce the percentage of cells with high MMP induced by HG, and MAN did not induce any alteration of MMP (boxed areas in Figure 2B). In vivo activity:
This indicates that GAAS (glycyrrhizic acid ammonium salt) could effectively improve the survival rate of mice, and the survival rate increased with higher doses of GAAS. Compared to the control group, the serum ALT, AST, and TBIL levels in the ConA group were markedly elevated (p < 0.01). After GAAS treatment, 25 mg/kg GAAS markedly reduced the ALT, AST, and TBIL serum levels in mice (p < 0.05), whereas these levels were dramatically reduced in the 50 mg/kg, 100 mg/kg GAAS, and prednisolone groups (p < 0.01, Fig. 1B–D). After GAAS administration, all of the various doses displayed improvement in the liver lesions to varying degrees. This suggests that GAAS could alleviate ConA-induced liver injury in mice.
